I felt really tired and stressed today. I work from home on my computer and when I get stressed, my natural response is to head for the kitchen and overeat on something sweet or salty and always comforting – I have behaved this way all my life!
Being vegan means a bit more control however and today I had my full bowl of salted popcorn and I tried the vegan shortbread called Millions (from Holland and Barrett – very salty) and all the time I am mindful of everything I eat.

This suits me perfectly and I feel in control and positive about it all!

 

This is what I have eaten today at the start of my third week of being vegan –

 

Breakfast:

Mid – morning snack:

  • 2 peaches
  • 2 pieces rye bread Ryvita
  • Cup of redbush caramel tea with Barista Oatly milk
  • Bowl of almonds and small box raisins

Lunch:

  • Green smoothie with a banana blended with soya milk and frozen spinach and kale
  • Almond spread on slice rye toasted bread with Flora spread
  • 1 peach
  • 1 Alpro cherry yoghurt

Mid afternoon snack:

  • Millions shortbread snack – very salty – not great
  • 2 figs
  • 2 peaches
  • Bowl of Tesco salted popcorn

Dinner:

  • I tried jackfruit for the first time (as shown in the photo) – cooked it with tomato, artichokes, onions, paprika, olives, capers, stock cube – really really nice alternative to chicken!
  • Brown rice
  • Broccoli
  • 1 satsuma
  • Coconut yoghurt
  • 1 passion fruit
  • M & S 100% dark chocolate – 1 square – a very acquired taste as dry and bitter
  • Handful blueberries
  • Cup mint tea and bed early as so tired today
