A day working at home. I felt anxious today and relished eating my healthy snacks and food as usually (pre-vegan days), I would just eat uncontrollably at my computer when I felt stressed – no thought for what I was eating or how much….and never actually tasting the sweets or chocolates or biscuits I was bingeing on!
Eating healthy vegan options has made me far more mindful of what I am cooking and eating which definitely supports a calmer and happier mind.
This is what I have eaten today being at home –
Breakfast:
- Rolled raw oats
- Soya milk
- Milled Linseed mix from Lidl
- Coconut yoghurt
- Handful blueberries
- Tic toc redbush earl grey tea with soya milk
- 2 Algae Omega 3 capsules
- 1 hrt tablet (keeps my hormones in check!)
Mid – morning I made some ‘oat cookies’:
- Oat cookies made with 1 cup rolled oats, 2 mashed bananas, 40g 85% Lindt chocolate chopped in small pieces, some amarinth seeds (from Holland and Barrett) – cooked at 180C for 15 minutes in tsp sized shapes – bitter chocolate but delicious!
- Cup of earl grey tea and soya milk
- 1 peach
Lunch sitting in the sun:
- Large salad with lettuce, tomato, rocket, malt vinegar, 1 avocado, seeds and olive oil
- Blueberries
Mid afternoon snack:
- 1 apple
- Cup redbush caramel tea and soya milk
- Bowl of Tesco popcorn
Dinner:
- Veggie mince leftover with tomato mixed into basmati rice, tofu and cherry tomatoes – really tasty
- Basmati rice
- Coconut yoghurt
- 1 passion fruit
- 2 squares Lindt 85% dark chocolate
- Cup mint tea and fell asleep in front of TV!
