A little like my poor Ruff, I too have suffered with a bit of indigestion with the sudden increase in all this healthy vegetable fibre for the last 2 weeks (yes we have only been vegan now for 2 weeks and learning about the best ways to eat as we go along:)
I decided that as I was grating an apple to settle his upset tummy, I would have some too…..and it made sense to include it in my morning oats as a delicious vegan bircher muesli!
This is what I have eaten today as day 13 of being a vegan-
Breakfast:
- Rolled raw oats
- Soya milk
- 1 tbsp Linwoods flaxseed, almonds, brazil nuts, walnuts and CoEnzyme Q10 mix
- Coconut yoghurt
- Handful blueberries
- Grated apple
- Tic toc redbush earl grey tea (my favourite) with soya milk
- 1 Algae Omega 3 capsule
- 1 hrt tablet (keeps my hormones in check!)
Mid – morning snack after morning park run:
- 2 plums
- Slice of wholewheat toast with Flora spread and almond spread (from Lidl)
- Cup of tea with Soya milk
Lunch:
- Salad of lettuce, rocket, baby tomatoes, pine nuts, malt vinegar and olive oil
- Sainsburys grain salad with 3 varies beans
- Piece of baguette and Flora spread
- Handful blueberries
Mid afternoon snack:
- Cup of tea and soya milk
- 1 plum
- 1 peach
- Bowl of almonds and small box raisins
- Some plain rye bread while walking dogs this afternoon (it was meant for them:)
Dinner:
- Tofu cooked in slow cooker with onions, red wine vinegar, white wine, cinnamon, vegetable stock – delicious!
- New potatoes roasted with olive oil and rosemary
- Green beans
- 1 satsuma
- Coconut yoghurt
- 1 passion fruit
- M & S 100% dark chocolate – 2 squares – a very acquired taste as dry and bitter
- Cup mint tea while watching my absolute favourite – Eurovision!
